Cucumber Radish Salad

Ingredients

· 1 English cucumber, thinly sliced

· 1 bunch radishes (about 9 ounces), thinly sliced

· 1 medium shallot, thinly sliced

· 2 tablespoons chopped fresh dill

· 1 tablespoon minced fresh chives

· ½ cup whole buttermilk, shaken

· 2 tablespoons mayonnaise

· 1 teaspoon sugar

· 2 teaspoons distilled white vinegar

· ¼ teaspoon salt

· ¼ teaspoon ground black pepper

Instructions

·        In a medium bowl, combine cucumber, radishes, shallot, dill, and chives.

·        In a separate bowl, whisk together buttermilk, mayonnaise, sugar, vinegar, salt, and pepper.

·        Pour the dressing over the cucumber mixture and toss to combine.

·        Cover and refrigerate for about 15-30 minutes or up to 4 hours.
